Build your Jack setup
Start by stacking the Jack bases on top of each other to create the ideal cooking height. Place Jack securely on top of the bases. Insert the support feet and carefully mount the plancha plates, making sure they sit firmly and evenly. This setup allows you to combine open fire cooking with plancha preparation at the same time.
Light the fire
Light Jack and let the fire slowly develop into a steady, even heat with glowing embers and gentle flames. Take your time here: good fire makes great food.
Rub the pork roast with olive oil and season generously with salt, pepper, thyme, and rosemary.
Cook over open fire
Place the pork roast on the raised grill of the Dynamic Centre above the fire. Sear the meat on all sides until it develops a beautiful golden-brown crust. Then allow it to cook gently, using the heat of the fire, until the inside is juicy and perfectly cooked.
Once done, remove the meat from the fire and let it rest for a few minutes so the juices can settle.
Prepare the sides on the plancha
While the meat is resting, cook the side dishes on the plancha. Fry the green beans together with the bacon until they become crispy and full of flavor.

On the other side of the plancha, melt a knob of butter and cook the apples until golden and soft. Add the cranberries and let everything lightly caramelize for a sweet and slightly tangy finish.
